Chorizo Queso Potato Skins

  • Cheddar

  • Flour 
  • Fresh chorizo 
  • Scallions

  1. Combine cheese and flour in one bowl
  2. Cook chorizo in a medium saucepan for 8 to 10 minutes and break them apart using a wooden spoon. 
  3. Add scallions, jalapeño, cilantro and a pinch of salt to the saucepan.
  4. Whisk the beer and bring to a simmer. Then, add cheese and stir constantly until smooth.

Spaghetti and Meatballs Nests

  • Sweet potatoes 
  • Melted butter
  • Leaves sage 
  • Panko or Japanese bread crumbs 
  • Large egg
  • Canola or vegetable oil
  • Grated parmesan cheese and lemon peel.


  1. Heat the sweet potatoes in a large saucepan to boiling on high. Then, reduce heat to maintain the simmer. Cook the potatoes for 10 minutes. 
  2. Mash sweet potatoes using a potato masher. Along with the sweet potatoes, mash butter, sage, 1 cup of panko, salt and pepper.
  3. Scoop sweet potato mixture, shape them to ovals and roll in panko. 
  4. Heat oil in a wide-bottomed saucepan on medium-high. 
  5. Fry frozen croquettes for 3 to 4 minutes until they’re golden brown. 
  6. After that, sprinkle it with a pinch of salt and parmesan cheese.
